In the Cellar Series, we unleash our passion for ever deeper layers of oily, velvety, liquid goodness.

We use a variety of bourbon, cognac, sherry, and tequila barrels to age our unusual creations and create unique tastes by blending several distinctly different beers aged in complementary casks.

Tallinn at Dawn

BA Imperial Baltic Porter 11% vol

An indulgent imperial Baltic porter aged in Madeira casks for 16 months.

Taste: The first sip explodes with a delightful mix of toasted grains, caramelized sugars and bright red berries, reminiscent of a warm homemade cherry pie. Bit by bit the character of Madeira starts to unfold and flows over the palate with notes of sun-kissed grapes, dried figs and chocolate ganache, balanced by a peppery hop bitterness and exquisite oak tannins.

A rich and vibrant imperial stout aged extensively in French whisky barrels.

Taste: An imperial stout with a velvety texture and an enticing medley of flavours, including heather blossoms, subtle notes of wildflower honey and dried dates. Opulent notes of dark chocolate, caramelised malts and mochaccino emerge, as the beer slowly comes up to room temperature.

BA American Strong Ale 12% vol

A full-flavoured American strong ale, brewed with US hops and lovingly aged in apricot brandy barrels.

Taste: The first sips reveal a soft malt character and a distinct fruitiness with notes of poached pears and dried light stone fruits. The beer becomes more warming and comforting as it warms up, leaving a pleasant aftertaste of cracked walnuts, fig jam and baking spices that linger long after the final sip.

Taste: Malty and rich, with the toasted wheat flavours providing a nice foundation for the vinous barrel character. Suggestions of floral hops, bananas, warming spices and honey emerge as the beer warms.

BA Imperial Sour Ale 10% vol

A barrel aged imperial sour ale brewed with Norwegian cherries and Estonian apples. Created in collaboration with our friends from Lindheim.

Taste: Jammy and complex, with crisp acidity coming from the apples, followed by notes of luscious cherries and rooibos tea. The finish reveals complex minerality and a touch of vanilla from the long maturation in oak barrels.

An imperial stout brewed with apple and Ceylon cinnamon, aged in apple brandy and XO Cognac barrels.

Taste: Sweet jam and dark sugar slides down the tongue, with freshly sliced juicy apples joining. Winter spices, dessert wine, and calvados join in and caramelised malt rounds out the palate before a touch of speculoos biscuit splashes over the aftertaste.

Drayman’s blend

BA Stoutwine 11.5% vol

Unfortunately, Drayman’s Blend was infected by hard-to-culture beer-spoilage organism called Lactobacillus acetotolerans, which is normally found in rice wine vinegar. This bacterium can enter a nonculturable state, which makes the detection troublesome for routine quality control measures. We have informed our distributors of the issue and asked to recall the product from the market.

A barrel aged Stoutwine blended from Scotch Whisky, maple syrup, and Sauternes.

Taste: A rich malt body combines with dark chocolate before being overwhelmed by sweet sherry and lashings of spicy peat smoke. Gentle notes of oak pair with caramel and dark liquorice flavours, finishing with the character of freshly pulled Italian espresso and toffee.

Earthy spices then appear, including long forgotten herbal aromas that are strangely familiar, as if remembering a childhood hike through nature, or the wild, gnarly, primeval end of your grandmothers herb garden.

As the beer warms, even the bitterness starts coming through as a rounded, medicinal quality rather than aggressive hops.

A celebration of Rye in all its forms - brewed with 70% rye grain and aged in american rye whiskey barrels.

Taste: With a mouthfeel like chewing on a dark and roasted black rye bread, this manages to be both richly sweet enough to be nourishing, whilst being balanced by the peppery spice of the rye malts. With an underlying spicy molasses like body and a touch of blackcurrant like fruitiness, the barrel ageing gives an additional layer of complexity - wrapping up all the other flavours in yet more spice and smooth charred oak.

Appearance: Deep, dark chestnut brown with a slight red hue and a beige head.

Nose: Rich dark fruits - figs, prunes, and raisins - and strong dark chocolate come through, with hints of winter spices such as cinnamon, cloves, nutmeg, and dark rye bread. Coming later are aromas of Kali, vanilla, some tobacco and huge rye - a bold yet inviting aroma that demands to be noticed.

Taste: Immediately the tastes of the rolling Glens of the Scottish Highlands will come to mind — rich warming grains, sweet honey, pecans and a hint of alcohol. Right after will come the lapping waves on a rain-battered North sea island — the gentle smoke of a peat campfire, the smell of the sea on a cold night, exotic liquorice, and a cracked black pepper spiciness to finish up.

Taste: Vanilla and coconut rushes onto your tongue at first taste, coming from the barrels. But then, an overload of fruit basket overtakes this: pineapple, lemon, lime, peach, lychee, and even a hint of melon. Amongst all of this a pleasing bitterness ties it together, with a freshness from the carbonation lifting the beer up and leaving you longing for another sip.

Our anniversary barley wine, aged for nearly 12 months in Port and Cognac barrels.

Taste: Rich, sweet malts, with dates, raisins, wine-soaked figs, dried plums and ginger biscuits. Cognac and ludicrously complex grape flavours come into play very quickly, balancing out all this sweetness with intricately layered tannins from the oak coming into play. After this assault on the sense, toffee and caramelised sugar come in - like a visit to Grandma’s kitchen, with the added bonus of some alcohol to warm you on a cold spring night.

A multi-layered stout aged in rum barrels from the island of Martinique for over 6 months. Named after the ancient Estonian war cry.

Taste: Silky smooth, sticky but not sweet. Taara Avita! starts off with the taste of pure sugarcane rum, and oaky vanilla. As the beer warms up, the flavour profile opens up too. Salty tastes from the peated malt shine through whilst the taste of fresh ginger biscuits lingers in the aftertaste.

Sherry barrel aged limited version of Valge Öö.

Taste: Sweet dates and rich treacle mingle with coffee and raisins. A smoky, earthiness intrudes, followed by chilli spice, before being washed over by dark chocolate and yet more plums. Finally, you are left with the decadent aftertaste of sherry-soaked figs.

Pinot Noir Barrel Aged Rye Porter 9% vol

Collaboration between Põhjala and Lervig. Released only in bottles. A complex rye porter, aged in Pinot Noir barrels.

Taste: The first taste explodes on the tongue with plums and redcurrants. These linger on the back of the tongue whilst also being slowly replaced by darker fruits - the tartness of blackcurrants mingling with sharp blackberries. Sweet dark sugar is present, but only in a supporting role, rather than making the beer cloying. Finally, when the glass is empty, you are left with the rich aftertaste - a reminder of the velvety, elegant body and refined flavours of the beer and pinot noir oak in symbiosis.
